Fonio Flour Pancakes
A light, nourishing grain bowl made with fluffy fonio and fresh, seasonal vegetables.

Instructions
1. Rinse the fonio well and drain. Place in a pot with 1 cup water or broth.
2. Bring to a boil, reduce heat to low, cover, and simmer for 5 minutes, or until the fonio is light and fluffy.
3. Heat olive oil in a pan over medium. Add the mixed vegetables. Sauté for 3-5 minutes until just tender.
4. Fluff the fonio with a fork and spoon into a bowl. Top with the sautéed vegetables. Add salt and a squeexe of lemon to taste.
